Udon refers to thick wheat noodles, and to dishes made with these noodles. The basic form of udon is known as kake-udon and consists of noodles in udon soup topped with seasonings such as green onions. Another classic type of udon is kitsune-udon, which has sweet and savory fried tofu on top of the noodles. Since ancient times in Japan, kitsune (foxes) have been regarded as messengers of God. Foxes are fond of fried tofu, and this was the origin of the dish's name.
